The Mont d'Or, also known as Vacherin from the High Doubs, is a cheese made from raw cow's milk, with a soft, uncooked, slightly pressed paste, offering a creamy and delicately salted consistency. It is recognized by its washed rind, slightly "reflowered," ranging in color from yellow to light brown.

It is encircled with a band of spruce and placed in a spruce wood box. Both the band and the box are integral to the production conditions of the designation. It has a flat cylindrical shape and weighs, including the box, from 480 g to 3.2 kg. Its diameter varies between 11 and 33 cm, and its height ranges from 6 to 7 cm.

The manufacturing, aging, including boxing, must be carried out at the same location.

Produced between August 15th and March 15th, consumption is only allowed from September 10th to May 10th. Mont d'Or is typically enjoyed at the end of a meal, but it is particularly cherished when served as a 'hot box' dish, accompanied by smoked charcuterie from the Haut-Doubs region, as well as ham and Morteau sausage. The wines that complement this cheese include all white and red wines from the Jura region, white wines from Savoie, and dry Jurançon.
