The term sardine first crops up in English in around the 15th century. It most likely refers to the Italian island of Sardinia which was once a favourite playground for huge schools of these silver fish.

Sardines are often sold in oil-packed tightly together in tins, which is why they lend their name to the old-school party game. But while some go mad for tinned sardines on toast, their strong, fishy flavour will have others turning their nose up in disgust.

We sell our sardines fresh which we think gives them a much wider appeal. Their oily flesh still possesses an unmistakeably fishy aroma and taste, but it is not nearly as pungent as that of their tinned counterparts.

How to Cook

Fresh sardines are a great fish to enjoy in the sun. They cook quickly when grilled or barbecued and play well with Mediterranean flavours like olives, capers, fennel, roasted garlic and herbs.

Cooked sardines also work well in a rich, tomato sauce.
