Beaufort is a cheese made from raw and whole cow's milk, with a pressed cooked paste and a natural rind. It can be produced in certain municipalities of the Savoie department and only two municipalities in the Haute-Savoie department in the Auvergne-Rhône-Alpes region.
Its paste, ranging from ivory to pale yellow, is supple and creamy. It may display some fine horizontal cracks (called "lainures") and a few small openings.
In the mouth, its texture is initially firm, then becomes melting, and its taste is well-defined without being strong.
