Morbier is a semi-soft, unpasteurized cow's milk cheese. Its rind is smooth, thin, even, and slightly moist, ranging in color from pink to orange-beige. The interior is ivory to pale yellow in color, with subtle openings.
It is characterized by a thin line of black ash running horizontally through the middle. Morbier is typically cylindrical, measuring 30 to 40 cm in diameter and 5 to 8 cm in height. Its weight can range from 5 to 8 kg
