Black Forest Ham - 100g
Dry-cured smoked ham produced in the Black Forest region of Germany.
Black forest ham is the pork's hindquarters that are first salted and seasoned with a mixture of herbs and spices. Then the maker will leave it to cure for several weeks. After the curing process, the hams are cold-smoked over fire wood which will give a smoky flavor to the meat.
The ham is normally dark red on the outside, and the meat itself is tender, moist, and has a slightly sweet and savory taste.
At Cagette, our Chef will slice it thinly and mostly serve it as a cold cut in sandwiches or as part of a charcuterie platter.
